You just peel and slice them and saute in a little olive oil just as you would fried potatoes or home fries.
Growing up, potatoes were fried in Crisco and were sliced in round disks. They were kinda hard to brown like that but then my dad did the home fries.
After I got married I noticed that my husband's family would slice the potatoes round then slice the rounds vertical making them into small FF shape.
Those were easier to brown and turn.
I have always like potatoes fried with onions and peppers.
I have learned to like Jalapenos better than bell peppers for cooking.
If you slice the outer skin off the jalapeno leaving the seeds and membrane behind, you get a stronger pepper taste and not so hot.
Cooking hot peppers cuts some of the hot so if you want it a little spicy, leave some of the membrane or add a few seeds.
Here is a link to a dish I made using sliced turnips in it showing how I sliced them.

For breakfast fries just use just onions or just onions and peppers.
They are so good. You can use rutabagas or jicama the same way also.

Linda - the two photos of your mixed veggies looked so good.  I am going to have to try that.  Thanks for explaining about the jalapeno also.  I guess the white in the frying pan was the turnips, and not the onions.  Assuming those were turnips, how many turnips does it take to get that much in the pan.  I thought turnips are very small?  Did it take a lot of turnips to get that many slices in the pan?  Jerrie :)

I probably used 2 medium or 3 small turnips.
Turnips can get very large but the smaller ones are tastier.
I enjoyed the dish, but DH does not care much for brussel sprouts.
I think he would have preferred Okra in the dish instead.

Wow those look delicious, I will be trying them. My mother always made fried potatoes and onions, sometimes she would add peppers!
