Re: Butternut Squash Fries
Cindy, there are others on the boards. I find a lot of good recipes at this website that can be tweaked to fit LDL.

Re: Butternut Squash Fries
All I do is cut it up the butternut squash in sticks like fries. First I microwave it for about 4 minutes to make it easier to peel and cut. They can be very hard to peel and cut otherwise. Then coat it with a little olive oil and sprinkle with salt and pepper, maybe a tiny bit of garlic powder. Then heat in a 400 degree oven until browned, turning several times throughout the process. If you don't want to use as much oil you can just spray Pam Spray on the cookie sheet, then spray Pam over the "fries". There might be other recipes for this on th boards, but that's just the way I cook them. I like to bake them until they are kinda crispy, so they are more like fries.

TY, Jerrie, that's what I was wondering if you micro it first. They are so hard to peel! Cant wait to try them.

Re: Butternut Squash Fries
Cindy - it might not take a full 4 minutes in the micro. 3 minutes might be enough. You will be able to tell by how easy it is to peel. After that I cut it in half and peel each side, then scoop out the seeds. My last butternut squash was pretty big and I kind of cut each half in thirds, with the bulb end being one third. Then just make sticks out of it. I don't remember but I might have seen a demo on youtube on how to do it. You might want to go to youtube and see if there are any videos on how to peel a butternut squash. Hope that helps. Jerrie

Re: Butternut Squash Fries
Pick up a CERAMIC vegetable peeler. Got mine at Wal-Mart. Will easily peel butternut squash without microwaving.....well at least much easier than a knife.

Re: Butternut Squash Fries
Thanks Linda for the tip on the ceramic peeler. I was wondering where is the best place to get one. Do they stay sharp very long? Also, what brand do you have as I would like to look for it at Walmart. Thanks Jerrie

Re: Butternut Squash Fries
It is Farberware and it goes across cucumbers like butter.
Never used a peeler that worked so good!
Have not had it very long...a couple months?
So no experience in how long it stays sharp.

Re: Butternut Squash Fries
Linda - is it just like a paring knife, or what? Will it be easy to find or do they have different sizes. Want to make sure I get the right one. Jerrie

Re: Butternut Squash Fries
It is like a newer "potato peeler". Has a thick black handle instead of the metal one like the olfashioned ones had.
It says a ceramic blade on the card it is secured to.
Here it is from Amazon:
Farberware Pro Euro Peeler, Black

Thanks Linda. So nice of you to find me a photo of the ceramic vegetable peeler. Now I know just what to look for at Walmart. Thank again. Jerrie

Re: Butternut Squash Fries
I love my ceramic peeler.
I picked it up at a Flea Market, really cheap (few dollars). It works like a charm but I have not tried it on a butternut squash yet. It makes quick work on cucumbers, rutabagas, and papaya.

Re: Butternut Squash Fries
I just use a regular potato peeler and it works fine on butternut squash.

It was about 4.50 at Wal-Mart.
On line prices were closer to $10.00
