Re:Substitute for Mashed Potatoes
Hi, I am new here and so very skeptical. I am curious, can this be done with frozen cauliflower? Fresh cauliflower is often so expensive (as are alot of the ingredients I see in these recipes) and they often put the frozen on sale. Just curious. I will have lots of questions and hope not to annoy anyone. I am hypothyroid and have been trying to lose weight for the last 5 years and the scales keep going up and I feel as if I am starving myself for nothing. Please help.

Hi, re the frozen cauliflower - I live in the Northeast and that's about the only kind I buy and it works just fine!
You can also make 'potato salad' out of it - I think you will really like it. Marlena

marysimmons wrote:Boy, I'm really sticking to garlic in my recipes today! Every now and then, I long for an old comfort food, mashed potatoes. Various people told me I should try mashed cauliflower instead, so I tried it. It was awful. Nothing like mashed potatoes at all. Well today, I tried again, and played around with the recipe until it turned out great. I had this garlicy mash to accompany my chicken & vegetable stew at lunchtime, and it was perfect and very filling.
Ingredients:
1 whole fresh cauliflower, cut into florets (pieces)
4 - 6 tablespoons garlic "butter" (see recipe in message boards)
Lowfat or skim milk (around 1/2 cup - 3/4 cup)
Boil the cauliflower in a bit of lightly salted water until softened. Drain. Put it into a blender or food processor with the garlic butter. Puree, adding a bit of milk at a time until it reaches the desired consistency of mashed or whipped potatoes. You can also do this with an electric mixer on "high." You can enhance the flavor further by adding freshly ground black pepper, chopped chives, or chopped fresh parsley.
This was our "mashed potato" substitute when I was on atkins several years ago. It is tasty! I recently put a mound on my plate, made the little gravy crater and put in a ladle of black bean soup, added to the plate a side of corn, some of Rogers beefy chicken. Now that's good eatin!

Gregg, I just have to tell you how much I respect the way you speak of your wife! You remind me so much of my husband ... he always refers to me as his "lovely bride", and as a wife, I just know that it means so much! Your wife is a lucky woman, just as I am, to have a husband who thinks so highly of them!
God bless you, brother!

Re: Substitute for Mashed Potatoes
Hi Mary,
I made the cauliflower potatoes with an awesome roast beef dish, it was awesome together! The "potatoes" were at first a bit watery, but the next day they were better. I think you have to watch the size of the califlower. I used two of them, and probably still could have cut back a little on the skim milk, but the flavor was good. I will post the roast beef recipe under main dishes.
