31 August 2008

Let's see, seems like I left off with talking about how hungry I was this morning. BUT I got distracted, getting ready for church and ended up running out of time. I missed breakfast.
Boy, was I hungry during church!
Afterwards half the congregation ate together at a local Mexican Food establishment. Good food, good fellowship.
The owner of the restaurant borrowed my book once and read it. She tries to help me stick to the best choices possible.
AND the church where I visit has a new minister and family. RT was kind enough to give the minister's wife a copy of the book along with the recipe cards and upcoming changes. So she and one of her daughters is eating the LDL way now for about a week.
AND just today at lunch my foster-mom asked to borrow my book again. She may give it another try.

OK, here's my food today.
Early Morning:
coffee

Missed breakfast

Lunch:
Taco, beef enchilada (corn tortilla), chili relleno in an egg batter, a few beans (no rice), salad (no dressing), a few corn chips with salsa, water.
[Now, keep in mind that I know processed corn is not a normal part of LDL. But the food I chose today fit the best with my eating plan, given the choices I had...  Not something I'll eat regularly.]

Supper: a few church members ate at Cracker Barrel
Pinto beans, greens, onion, water

Sorry my Bean Queen, please forgive your humbled servant!

RT, please tell Neets that that is a good idea. I'll try. However, around here they tend to use iceberg lettuce for a taco salad instead of dark, leafy greens. And I share my mother's dislike of iceberg lettuce.

Let's see. Today was a bit of a blur.
I know I had coffee around 6am.
I went back to bed and slept through breakfast.

Lunch:
Romaine lettuce; chicken topped with grilled zucchini, red bell pepper and onion; corn, spinach, pinto beans.

Supper:
Grapes

;D
Thank you RT!
I weigh tomorrow. (I am excited; I can feel a change in my torso this week!)

I have had coffee (yuck!)

I have breakfast and lunch packed. I may try a taco salad tonight (thank you for the suggestion Neets!).

Before Breakfast:
coffee

Breakfast:
banana, Jenny O's Extra Lean Turkey Bacon. 2 'fried' eggs, raw oats soaked in skim milk with cinnamon and Stevia, Hot green tea with Stevia, water vitamins.

Lunch:
2 big bowls of black eyed peas with home grilled steak, water, vitamins

Snacktime:
hot chamomile tea

Supper:
I attempted a taco salad. Asked the waitress if they used iceberg lettuce or romaine. She said romaine so I ordered it. NOPE! It was iceberg. I picked the meat, low-fat cheese, and tomatoes out and just ate them with salsa (leaving the shell and the lettuce behind), drank water. Oh well, at least I tried....

Enjae - I meant to say something the other day - I tried your raw oats with skim milk (I used Splenda rather than Stevia) - and I've gotta tell you - I LOVED IT!!  Unfortunately, IT didn't like ME!!  Boy did I suffer the next day..... :) (which doesn't mean that I won't eat it like this again! LOL!!)

carolyn....i think if you start out by cooking it less and less until you're able to eat it raw, you should do ok......i think when you eat it undercooked or not cooked a lot, it's more difficult for the body to digest it, which for US is GOOD.........

Sorry Sweetie!  :-\
I guess it makes a difference that I started out just eating a pinch of raw oats occasionally when I was 2yo.

Hey RT (and Neets),

You wrote: "Neets has a great idea for you NJ...when you are eating at a Mexican restaurant. Order the Taco Salad, WITHOUT THE SHELL, and with extra beans on the bottom...and without the gook that they put on the top. Put salsa on top and enjoy!"

I tried a taco salad last night.
*I didn't ask them to bring it without the shell because I figured the shell made a perfect bowl and I am not tempted at all by the shell. (I kinda think the flour shell is gross.)
*I didn't ask for beans because I know for sure that this particular restaurant makes extra fattening beans...
*I didn't even try to eat the iceberg lettuce. I am physically stressed with foot and back pain right now. I am emotionally stressed with the loss of my client and adjusting to a new (busier) schedule. When I am stressed I react more strongly to things I do not like. So the polite thing to do seemed to be to scrape what I would eat off onto a plate, set aside the shell and lettuce, and just eat.

I was so tired, anyway, that I was in bed by 9pm rather than staying up till 11pm (or midnight, or1am...)

And today I get to begin again! Looking forward to breakfast!

Thank you both for your love on these boards.

You know, I have never been a big iceburg lettuce fan either. I think that is one of the reasons I am not a big salad eater. I prefer raw spinach in place of lettuce in salads. (:

I hope you get to feeling better soon, Enjae!

That's so funny....but seriously..i think a cow pea is also known as a field pea and to me it looks exactly like a black eye pea...if it's different, maybe it's a little smaller than a black eye pea....they sell them at a farmers market near where my mom lives and they're awfully delicious..especially when cooked with beef neck bones.

if anyone can tell me how to make black eye peas without the gas, i sure would be appreciative!

God bless.

Good idea, Niki!  Yes, I know that it's good for us - but at the time, my poor tummy was rolling!

Enjae - You know, I READ where you said that this is how you started eating your oatmeal raw...once again, it must not have totally made it's way to my memory banks... LOL!  This happens occasionally.  Sometimes I blame my teenage ways of the 70's - you know - the killing of brain cells!!  haha - actually, compared to most, I was pretty tame....

LOL!!!
I'd forgotten that thread, niki.

 Margo it takes a LOT of work to fix black eyed peas the way I make 'em!!! --  I open a can and pour 'em into a pan. Add ground pepper, garlic and onion powders. Heat and eat.

I suspect we get gas from things our bodies are not used to digesting. Like, I can eat raw oats because I've done it for 45 years, but Carolyn gets gas the first time she tries it. And everyone 'knows' beans give you gas, but we've found that if you eat them regularly for awhile the gas problem goes away.  And I remember the first time I ate bread after leaving it alone for 6 months -- gas.

Caro-Hon; I wouldn't expect you to pick up on a little detail like THAT!!! I didn't even 'get it' until your comment on gas triggered my realization.

Let's see what I can remember:

Coffee;

Forgot to grab fruit as I left the house - 2 eggs, non-sugary turkey bacon, oats, tea water vitamins

chicken breast, steak bits, corn, spinach, green beans, regular (caffeine) tea, water, vitamins

grapefruit

vegetable 'stew' (several leftovers thrown together and heated in broth), water, vitamins
