Monday, Dec. 15 -- 10 days 'til CHRISTmas.  Hope everyone is out there spreading cheer and news about our Savior !  It has bean very quiet here on the boards for the past week.  Everyone must be busy Christmas shopping.  Hope nobody is using that as an excuse to visit Cinnabon ! ! !   :stop:

I have heard that people experience depression during the holiday season more than at any other time of the year.  The best way to avoid being depressed and sad is to look for opportunities to bless other people.

There is a widow lady at my church who is only a few years older than me.  Several times I have heard her obliquely reference her husband's passing and I know she is very sad and lonely, but she always keeps a sweet smile on her face.  Yesterday the Lord inspired me to slip her a small wrapped gift I had in my pocket that, truthfully, I had intended to give to someone else.  The different emotions that flickered across her face were a beautiful thing to see.  I still feel all warm and fuzzy, like it was a gift to me FROM: God. :inlove:

Breakfast -- 7 am
  • Apple, Pear, Orange
  • Popcorn, Chocolate-Orange flavored Coffee with Stevia & lowfat milk.  I don't generally like sweetener in my coffee, but I made this one taste like one of those orange flavored chocolate candy balls that breaks apart into segments when you whack it.

Lunch -- Noon - Don't know yet.  I'm still creating it.  It will involve beef, chicken broth, tomatoes, bell peppers, celery, onions, okra, canned cannellini beans & garlic.  Sounds like gumbo for me!

OH WOWWEE WOW WOW == I don't know if it's just because I was in the mood for it, or if I got lucky and made a really good batch from scratch, but the gumbo turned out AWESOME.  It was a kind of refrigerator stew - I threw in several different kinds of cooked lean meat (leftovers) from the freezer.  Didn't have any shrimp or sausage so I put in a frozen teriyaki salmon filet cut into big chunks and made it a little smoky by adding a handful of smoked paprika which turned it the most amazing reddish-brown color, taking the place of the roux.

It doesn't sound like a gumbo at all, does it?  It was really the "Trinity", tomatoes, & garlic in the broth that gave it just the right flavor.  I thought the broth would stay thin because I didn't add a roux, but once the okra cooked a little, it was just as thick as you could want.

Joe doesn't like okra and was hesitant to try it, but it smelled so good when it was cooking, he had to try a couple bites and HE LOVED IT.  Together we put away 2/3 of five quarts on the first day.

Okay, it wasn't luck or skill.  It was a blessing straight from God.  This was confirmed later in the day when I went to the doctor.  The Web M.D. magazine cover story was a huge spread (about 6 to 8 pages) about Randy Jackson, of American Idol fame.  He has lost 100 pounds through gastric bypass and was telling all about how he has changed his lifestyle.  The article included one of his favorite recipes of -- guess what?

Gumbo Ya-Ya ! ! !  He makes it with little sausage patties he makes out of ground turkey seasoned with no-salt Cajun seasoning and fries in olive oil before adding to the gumbo.  The whole recipe was LDL except for the 1/4 c. of flour to make the roux.  I'll post the recipe when I have more time.

Love to all,
Gwen

Tuesday & Wednesday - Dec. 15-16

Neil's been sick with a nasty head & chest cold and the kids have been here.  We've all been shooting around in different directions, shopping, playing games, watching movies, eating differently at different times.  Today they went to his mom's house for a week, so will take advantage of the quiet time and get back to my 3 defined meals a day.  Don't was to mess up my progress.  Hey!  I just realized.  This will be the first year, probably ever, when I haven't felt the need to go on a diet after the first of the year!

For two days, been eating up the gumbo, supplemented with popcorn, apples & oranges.

Tuesday I was busy outside doing laundry and hanging Christmas lights while the kids were out running around.  In the afternoon they brought me a huge Cajun Hamburger with thick cut french fries.  They said they had asked for coleslaw, but it wasn't in the box.  No worries.  I only ate the meat, lettuce & tomato  & threw away the bun & fries.

Today Michelle finally went to the store so I have GRAPES again.  I ate grapes and popcorn until they were coming out my ears and still wanted more.  Had a big bowl of chili for lunch.

Christmas light look nice outside even though we didn't put up everything as we have in the past.  This year I strung lights on what I could reach, & did it mostly by myself, so they are so low it looks like a Lilliputian did them!  But even that little bit makes a glow that just makes you feel good.  It thousands of times better than just the grim darkness.

singing ... 'this little light of mine...I'm gonna let it shine...let it shine, shine, shine...let it shine!'

night, night

I couldn't help but sing "This Little Light of Mine" with you.  I agree, the lights make it so cheerful and bright outside.  I hope Neil gets better real soon.

Sounds like your family are having a great time. We are also but the icy conditions have made it impossible to do much shopping.  My dh is going to take me around to a few places so I can get started on gift buying.  We are going to make Swedish rosettes and chocolate bom boms to make plates for the neighbors and his clients from his business.  I'm having him help me so we can get it done without consuming any of them.  Usually I make ton's of goodies at Christmas  but not this year.  My son, daughter, and son-in-law are all following  the ldl eating plan so none of us want it around.

No fretting about starting a diet after New Year.  What a great feeling!!!!!!  Seems as long as I can remember, I started some diet after all the feasting during Christmas and New Years.  Praise the Lord.

Hope you have a wonderful time with your family.

Friday, Dec. 19 -- My day at the hospital getting Remicade infusion.  Some days it only takes a couple of hours, but I still have to plan for 5-6 hours in case my body decides to go freaky & have a bad reaction.  Friday wasn't bad.  Was only there 1/2 a day & most of that was spent visiting doctors, nurses, techs, cafeteria workers & the friendly barrista!  Neil & I have spent so much time there, both as patients & visitors, we're practically family with much of the staff.

Breakfast - Last cup of Gumbo & ?? -- probably fruit & popcorn, but NO COFFEE before an IV.  It makes your veins shrink.

Lunch - @ Hospital cafeteria (my big outing for the month - LOL.  They have the best food.  I can ALWAYS find LDL choices there)
  • Veracruz Chicken (baked white meat smothered in hot & spicy tomato sauce & sprinkled w/ Mexican style shredded cheese) I removed half the cheese before eating
  • Corn, Green Beans w/Onions, Ice Water

Midafternoon -- Large Nonfat Latte w/ extra shot

Dinner - 6pm
  • Salad bar takeout from hospital:  Romaine & baby lettuces, tomatoes, cucumbers, bell peppers, garbanzos, stuffed green olives, 3-Bean Salad, drained Mandarin Orange segments, sunflower seeds & raisins.  I wanted some Gumbo Soup, but it had rice in it.  I'll have to make some more when Joe & Michelle get back.
  • Popcorn, grapes & skim milk for dessert.  Neil was having hot chocolate & I had to have SOMEthing dairylicious.  I could made a smoothie, but I was pretty wiped out from the treatment--too tired to do any food prep.

Saturday, Dec. 20 -- Went Christmas shopping with Neil in the afternoon

Breakfast - 9:30 am
  • Dal (red lentils, garlic & onions, cooked al dente in chicken broth)
  • Popcorn, Red Grapes, Nonfat latte

Lunch -- around 3 pm
  • Grapes & water I carried with me.
  • Later (maybe around 5:30) had a Chicken Caesar Salad minus the croutons at Sam's Club Snack Bar.  No kidding - along with the pizza & hot dogs, they had premade salads.  I've said it before, the Lord ALWAYS provides LDL food for me wherever I go.

Dinner - 9:30 pm
  • Lentil Soup (leftover Dal & beef broth, with a couple ounces of cooked hamburger meat crumbled in
  • Dry Roasted Soybeans, Water

It's true, Mary.  Sometimes you can get so hungry or thristy, when you can't find anything LDL acceptable, that you become desperate and just grab anything to fill the void.  You know the old adage, "It's better to have it and not need it than to need it and not have it."

I confess, my motives for carrying a snack were purely selfish.  I much prefer my own food to anything you can get out "in the world".  I know it's clean, wholesome and LDL approved - at least, as much as you CAN know about stuff you buy at the store.  It's funny - as I was eating that perfectly lovely salad, I was thinking, "I wish I had thrown a couple of those Roger Burgers into my bag!"

Mr. Roger Troy Wilson has spoiled me for life.  Thank God!

Sunday, Dec. 21 -- Stayed home from church today, of all days.  The Sunday worship service before Christmas is always so special I’m VERY bummed to have missed it.  Sadly, Neil’s nasty cold finally caught me.  That’s one of the down sides to the Remicade infusion.  While it does a great job of putting the rheumatoid arthritis into remission, it does it by suppressing your immune system to make your body stop attacking itself.  Unfortunately, it also stops your body from attacking anything ELSE that’s trying to attack you.

Breakfast – 10 am
Fresh batch of al dente DAL – heavy on the chicken broth, garlic & onions.  Added a bunch of orange bell peppers for an extra shot of Vitamins A & C
Apple Pears, Popcorn & Coffee w/nonfat milk

Lunch - 1 pm
  • Steamed Broccoli, Corn, Diced Turkey & Cooked Ground Beef -- all kinda piled up together in a big bowl.
  • Grapes, Popcorn, Ice water

Dinner -- 7 pm
  • DAL with extra chicken broth to make soup
  • Grapes, Skim Milk (I don't have any greens & am under strict instructions from the rheumatologist to get 3 servings of a high calcium food daily due to my bone & joint issues.)  I will discontinue to daily dairy once I get stocked up on dark green leafy substances.

HI - Just checking in briefly.  We have had the most relaxed, happiest Thanksgiving and Christmas season any of us can ever remember.  No stress, everyone seemed to enjoy their presents. Meals were no big deal.  I never did make the "BIG" Christmas dinner.  We ended up ordering Chinese on Christmas Eve Eve when Joe and Michelle got home.

Another great surprise was that, instead of dropping Michelle off here and going right back to his mom's in Port St. Lucie for Christmas Eve & Christmas, he ended up staying here with us for another week.  We were sorry to learn that his mother got sick with a bug that she didn't want Joe to catch before going to Dallas to see his dad for two weeks.  So we were honored to have him stay here with us.  We all went to church together for Christmas morning service.  It was a beautiful thing.

Another wonderful thing that happened - Michelle was pouting when Joe finally left and making him feel bad, wishing she could go.  The two of them spent the next couple days texting and plotting and researching cheap airline flights. I think he passed the hat to aunts & uncles in Dallas and managed to come up with a round trip ticket for her to fly out & join him.  They are having a blast ! ! !  It is VERY romantic.  I think this may last a while.

Neil and I are enjoying a few days of quiet R & R, learning to use the secondhand Wii that the kids gave us for Christmas.  My computer got buried in the back room during all the Christmas excitement and I've have just unearthed it today.

I am celebrating my 82-1/2 pound personal weight loss my first year on Let's Do Lunch.  Thanks to God and Roger for leading me here.

Wishing everyone health, prosperity, and God's richest blessings in the new year!

Love, Gwen

I'm still missing you and hoping everything is ok with the two of you.  I decided to reread your journal from the beginning and enjoyed it again.

I have been thinking a lot about what I can do  this new year to see weight loss and feel better about myself.  I feel being so heavy hinders my relationship with people at church and neighbors.  I like to beat myself up and tell myself that no one wants to be around me.  I know it is with in me  and when I do reach out, I get so blessed.  I'm tired of hiding.  So hope this year will bring a release from this bondage.  I know God is able to help me.

Thanks for all your posts, they help me so much.  Please come back soon.

Carrole,

I know exactly how you feel...God can and will deliver us from this place that seems so dark sometimes that we can't see the light at the end of the tunnel.  I feel better in every way when I stay LDL AND when I come here and join the chats on the board.

This is a New Year, and in this new year, we will be NEW!

Hang in there and Keep you Eyes on Jesus...He will help every step of the way!

Hugs & Blessings,

Gwen, are you ok???????  Please come back soon if you can.  I hope you are not stressed out with all you have on your plate, don't know how you manage it all.  God must give you extra strength to do all that you do and still have a good attitude.

Love to you,
