Wendy,

The dishes you are taking to your Christmas dinner sound so good and they will be a great accompaniment to the beef and ham.  Where did you find the recipe for the Oriental Mandarin 3 Bean salad?  I have two different 3-bean salads that I make but would love to add another recipe to my cookbook.

Enjoy your dinner and MERRY CHRISTMAS to you and Mike.

i found the recipe under salads and it sounded so good.  i couldn't find rice vinegar so looked it up to see what to use as a substitute and found I could use cider vinegar in place of it.

I have everything to make this salad EXCEPT the all fruit apricot jam--wonder if there's time for one last run to the store before the storm hits.....

Merry Christmas Wendy!  I enjoy your posts--you inspire me to try new things!

i have spent the day making salads and soups for Christmas day.  We went out to dinner and I was very careful to order skinless chicken with dinner salad.  But when we went to candle light service they had cookies and I did really well and was so proud of myself.  So then my friend gave us a box of homemade cookies so I did eat 3 of those but then i walked away and said no more so I don't feel too bad that I cheated a little bit.

B:  Orange, banana, grapefruit smoothie
L:  Taco soup
D:  chicken Breast
    Dinner Salad
S:  3 cookies

Mikes Day

B:  shredded wheat cereal w/ skim milk
L:  Taco soup
    Wasa crackers /honey

I made all the food for LDL and took with us.  I surprised myself with liking food I have never liked before.  My taste buds are changing and learning to like things I never dreamt I would even try.  I made the Butternut & Garlic soup, it is so much fun to make and when it was done I needed to see if the spices were right and Mike wasn't here to try it for me so I took a taste and loved it.  It didn't even taste like squash but a blend of rich flavors.  A friend made a special pie just for me because she knows I love pecans and carmel.  I ate a piece and thankfully it wasn't real sweet.

B:  3 eggs, 2 slices cheese, chili
L:  Got busy and forgot to eat
D:  Prime rib, ham, LDL salads, LDL soup, Potatoe w/ gravy, bread roll
Piece of pie and some candy

Mike's Day
B:  got busy and didn't eat
L:  got busy and didn't eat
D:  Prime rib, ham, potato w/ gravy, LDL salads, LDL soup, eggs
Jello salad w/ whip cream & cream cheese
    Potato chips & dip
    bread roll w/ butter
    2 pumpkin pie

I feel awful with just the little bit of wrong eating yesterday.  My stomach is unhappy and one thing I noticed is a runny stuffy nose that I haven't had since starting LDL.  Even my body knows when something bad goes into it!  I never take naps but my body just had to sleep today and now I feel better.  It is amazing how God created our bodies to heal while we sleep and heal while we laugh.

B:  Orange, banana, grapefruit smoothie
L:  Prime Rib, LDL salads, shrimp, jello w/ ff cream cheese
D:  Popcorn
    2 fresh Mandarin Oranges
    Raspberry banana pie

Mikes day:

B:  Orange, banana, grapefruit smoothie
L:  Prime rib, LDL salads, shrimp
Jello w/ ff cream cheese salad
D:  popcorn
7 corn thins w/ spinach dip
    Mandarin Orange
    8 oz. sf veggie juice

I have been hungry for carmel.  All the fruit hasn't really taken care of that.  I am not a big chocolate eater but I always loved carmel.  So tonight I made the LDL fried apples and then added a tbs of sf carmel on top.  It was wonderful and  seemed to satisfy that spot and I am thinking it will be ok for an every once in a while thing.

B:  Orange, banana, grapefruit smoothie
    Taco soup
L:  Taco soup
    2 fresh mandarin oranges
    Shrimp
D:  popcorn
    Shrimp
    carmel hot apple pie

Mikes Day

B:  shredded wheat cereal w/ skim milk
L:  raspberry smoothie
    Taco soup
    Shrimp
D:  Popcorn
    Diet Mt Dew
    Carmel Hot Apple Pie

Here is the page for Fried Apples.  I cooked mine with the peels on and that was great but may try with them peeled next time.

Oh, yum, Wendy!

The sugar free caramel -- when you're craving it and nothing else will do -- sounds delicious with the apples! I will remember that! We canned umpteen quarts of apples, seasoned with cinnamon and ready for pies (no sugar!), to prepare for Christmas, and have quite a bit left. They're wonderful as is, but a touch of sugar free caramel would make them extra special as a rare treat.

I can see you're rolling right a long and making LDL work for you.  God bless in the new year with much success!

Wendy we are alike in so many things.  I could careless about chocolate things, but Carmel and cream cheese and things like that is hard to ignore, even though I don't "crave" them.  I just want them.  I have done well so far, but when I get to my weight I don't want to forever deny my self of anything, just use my head and only once in a while.  Today I had a diet Pepsi (had been drinking diet rite) and my throat was hurting after.  So maybe I won't even be able to eat anything off of LDL later, but I don't want to say I "won't" ever.  you know what I mean?

I was blessed never liking the taste of pop, you know that fizzy stuff.  It has left me not liking alchohol or wine for the same reason because most of it is mixed with soda of one kind or another.  I have to say that I don't really think I am craving anything but you are right I just plain wanted carmel and a cooked apple just doesn't taste the same even with the wonderful taste of cinnamon without the carmel.  It was a great taste and now I will have it again some time and not feel deprived.
Now cream cheese that is another one of those things where somethings are just not complete without the cream cheese added.  I make that a definate once in a while item.
Hope you had a wonderful Christmas and are looking towards a healthy & blessed New Year

I am running out of fruit and so will need to be doing some shopping.  I made the Roasted Garlic Soup last night but decided I am not crazy about the taste so will have to do something else next time.  Who would have thought I would not have loved it since garlic is one of my all time favorite foods.  I put it into everything even if it isn't called for.

B:  Orange, Banana, Grapefruit Smoothie
L:  Roasted Garlic Soup
    Popcorn
    Fried Apples
D:  Roasted Garlic Soup
    2 Fresh Mandarin Oranges
Corn Thins & SF Blackberry jam

Mike's Day:

B:  Refried Beans w/ 3 eggs
L:  Green Salad
    Chili
    Fruit Smoothie
D:  Roasted Garlic Soup

Just reading again about the fried apples make me want them.  I have plenty of apples in the garage.  For thanksgiving, I followed the recipe, but left the apples whole, took out the core, and put raisins in.  baked for 45 minutes--Sooo delicious.  I did them according to the directions as well and  also love them .  I usually have them left so reheat in micro for breakfast.  I need to get me some sugar free caramel..What brand and  with what is it sweetened?  Thanks, Joyful Friend

I went to the doctor this morning and was down another 3 lbs from 2 weeks ago.  She asked me what I was eating and when I told her fruit, beans, veggies and popcorn she told me I need to not eat so much beans and fruit.  When she asked what I have for breakfast and I told her what I put in my smoothie she said," Oh My! You don't eat all that fruit in one meal do you."   I didn't say anything but I am thinking the proof is in the pudding as they say I am losing weight, feeling great so I think what I am eating is working.  Even my blood pressure was way down this morning which is a miracle in itself.

B:  Orange, banana & grapefruit smoothie
L:  Taco soup
    2 fresh mandarins
    1 apple w/ carmel sf
D:  Stir fry w/ EVCO
      2 Mandarin Oranges

Mike's Day:

B:  Mixed fruit smoothie
L:  Roasted Garlic Soup
    Avacodo
    Green Salad
D:  Stir fry w/ EVCO

Wendy,

Sorry your doctor was not more supportive of your (our) WOE.  You
would think she could figure out that it was working for you
since you are losing weight and since your BP was down.

Good grief!

You are doing great......don't let her discourage you!

Another amazing story about how woefully little medical professionals understand about nutrition.  Please don't let her cause you to doubt what you're doing.  You might teach her a thing or two (or many :inlove:)!  Pam
