Karen the pie is the same as the Blueberry banana pie on the boards.  I just mash the banana and put the sweet frozen cherries on and add some cinnamon and vanilla.  I cook it 4 minutes in the microwave.

DK if I can come up with some new ideas I will post them.  Today I made taco meat and then put refried beans on the Corn Thins and put the meat on top with salsa and a drop of cheese.  They were very filling and I didn't miss the wheat wraps at all.

I stayed up late last night and made one of Deborah's soups for Mike.  It was supposed to be split pea but all I could find was mixed beans with split pea and lentels mixed in so that is what I used.  I dumped everything into the crockpot and it cooked all night and was ready by this morning.  The only problem with making it this way is all night long I kept waking up smelling the most wonderful smell.

B:  Mixed Fruit Smoothie
L:  Corn Thin Hamburgers(sirloin ground)
D:  Strawberry, bluecheese crumble green salad
    Raspberry,blackberry,strawberry & banana salad

Mike's Day:
B:  Refried Beans & eggs
L:  Mixed Bean Soup
    Avacado
D:  Popcorn
    Strawberry, bluecheese crumble green salad

It turned out wonderful with lots of flavor.  I cooked the beans up ahead on the stove until they were about half done so they would be soft by morning and that worked real well.

Hi Wendy!

Wow, you are doing awesome! You've taken to Let's Do Lunch like a duck to water!

If Mike is getting tired of soup for lunch, you can send almost anything in a container, as long as he can heat it up. Is he away from home more than a day or does he work a shift? As long as he can keep things refrigerated, anything will work. You could try RM's Made Rights (sloppy Joes), on corn thins, beans, or as lettuce wraps. I see Deborah also posted a spicy sloppy Joe recipe that looks great. Tamale Pie or Shepherd's Pie (Beef Potato Pie) would be filling and are delicious. Even veggies and chicken, as a stir fry or casserole, works great. Beans in a salad is a nice change from having them in soup all the time. One of my favorites on the recipe boards is Black Bean and Citrus salad -- with or without the avocado. There are dozens of other salad recipes that I haven't got around to trying yet!  ;) One of my favorite main meal salads is the Chicken Waldorf salad. My hubby loves it! And it travels easily as long as you can keep it cool.

What I love about most of these recipes is that they are so easy to prepare! I love to cook, honest I do, but don't really have a lot of time to devote to it. So having something that goes together quick and easy -- whether it's soup or casserole or other main dish -- and is delicious besides, just makes my day!

Your progress is so fantastic! How are the knees?

My knee is much better and I am driving some now so I am not so house bound.
Good sugestions for Mikes lunches. (oops) He comes home everyday so I don't have to make something that travels. I didn't mean he comes home to our home everyday but he stays in town and eats his lunch.  Sorry I wasn't proof reading very well.   I have been trying to do easy things since my surgery and soups are so nice and easy.  But I am well enough now that sitting on a stool I can do more cooking then I was.
I just love this way of eating, I was down another lb today even.  I keep hearing how everyone hits a wall at some point but I hope that doesn't come anytime soon.
I will be going to Idaho next week for about 5 days and it will be the first time since I started LDL that my family has seen me.  I have been trying to get them to go on this with me so I bought an extra book to take and leave for everyone to read.

Wendy,

Your lunch yesterday (grilled chicken, etc) made my mouth water.  I'm curious...if Mike comes home for lunch every day, how come he had soup again?

Mike eats lunch at work that he takes with him in the moring.  I need to get busy and cook something for him that he can take that is not soup for awhile.  I will be leaving the end of next week for 5 days so he will have to have soup but I like the new ideas that have come up to try for him.

Boy, I am confused.  You say mike comes home for lunch and then you say he eats lunch at work.  What am I missing?

I bet you can't wait to see your family in Idaho.  They will be so surprised to see how much skinnier (is there such a word?) you are now than the last time you saw them.

Oh sorry I must not have made it clear when I said he doesn't travel so I don't have to make lunches that have to travel for days.  I make lunches he takes to work with him though for 4 to 5 days aweek.
Oh my I just went back and re-read what I had written and you are right I said he comes home and eats lunch everyday.  I guess I need to proof read better.  I mean't he doesn't drive truck or anything like that so he stays in town and eats on those days he is working.

My cousin who has been staying with me during my surgery recovery has been visiting our TOPS group here to stayed weighed in.  Before she came to us she had lost 57 lbs by pretty much starving herself.  She had been on a plateau for a while and was ready to give up when she came to us.  She went on LDL and has loved it so much she has been talking to her diabetic husband about going on it when she gets home.  Well when she weighed in at the group she has lost 7 lbs in 3 weeks.  She is so happy that she has been calling her friends and having them order the book and get started.

B:  Fresh strawberries, bananas & raspberries
L:  Cracker Barrel Chef Salad w/ sweet onion dressing (had them remove the ham for grilled chicken)
D:  Fresh strawberries, bananas, & raspberries
    Popcorn

Mike's Day:
B:  Scrambled veggie & eggs
L:  Cod Fish & chips at Cracker Barrel
D:  Butternut Squash & Roasted Garlic Soup

Wendy,

Thanks for clearing up Mike's lunch question -- I thought I was going "bonkers"

I'm so happy for your cousin finding LDL through you.  It sounds like she loves the fact that she lost weight without having to starve herself.  I hope her husband joins her on her LDL journey because there are many members here with diabetic issues and have reported amazing results eating this way.

I bought some Pork Tenderloins from Costco and cut the fat off around the edges for lunch.  It made me remember why I love the meat from Costco so much more then most stores.  They were so thick I cut them in half and the flavor was great and we could easily cut it with our forks.

B:  Orange, banana, grapefruit smoothie
L:  Balsamic blackberry Pork Loins
    Corn
    LF Cottage Cheese
D:  Stir Fry w/ pineapple in it

Mike's Day:
B:  Refried beans, cheese & eggs
L:  Green Salad
    Corn
    Balsamic Blackberry Pork Loins
D:  Stir Fry w/pineapple in it
    Banana
    glass  of skim milk

Isn't it wonderful being able to share LDL with others and see their success??!  I shared it with a gentleman and his mother on our recent cruise and he was so excited.  Winston, have you ordered your book?  Pam

I love sharing LDL with others and encouraging them to go on the plan.
I have a question for you Pam.  Do you have trouble with your red blood count fluctuating?  I have a friend with ms and my mother in law and they both told me they have to have blood test often to check blood counts.  The reason I am asking is my friend Kathy I have been asking prayer for is still undiagnosed why her red blood count has gotten so low and it was suggested to me that maybe she had ms and I wasn't aware of ms causing a problem with the blood.

Off topic a bit here, but I remembered when I read Terri's post here something that confused me. What does "RMs" mean in " RMs Done Right"?
From the recipe I thought it sounded like Slopppy Joes.

Thanks,
Pat
