Re: Wendysgoodnews 1st day to Weight Loss
We went to Golden Correl in Spokane last night. I did really well since it was seafood night and their steak is always good.

Re: Wendysgoodnews 1st day to Weight Loss
I went and saw a friend today that I hadn't seen in 30 years. It was so fun to catch up on everything over the years yet sad since his wife who had been one of my best friends when I was young had passed on in December.
My older son decided to bbq steak and chicken tonight and I had already ate a bowl of soup at lunch with meat in it. I didn't want to hurt his feelings so I ate the lesser calorie of the two which was the chicken breast. I had lots of different kinds of fresh fruit from Costco so I cut them up to put with it.

Re: Wendysgoodnews 1st day to Weight Loss
We had the special dinner at my future daughter in laws parents and the only thing I could eat was the fruit I brought. The rest of the food was really fattening things and the 2 desserts were really fancy and piled high with all kinds of sugar sauces and frostings and nuts. Thank God for LDL I was able to help my mom get her food and it never even tempted me. I did eat a little piece of ham but otherwise I just waited until I got home to eat. I felt so powerful passing all those foods by and knowing how great I feel eating LDL foods. Knowing it is not worth the moment it would take to eat garbage.

Good for you Wendy, this will be the moment to remember if temptations ever try to lure you again. You can remember how you were able to walk on by then, and you can do it over and over for ever to remain healthy.

Re: Wendysgoodnews 1st day to Weight Loss
You are doing so awesome, Wendy!

Social situations can be hard on many counts, and you did great with the bbq. It was a great choice to have the chicken breast and lots of fruit. It is not a "diet breaker" to have protein twice in the same day, especially when you aren't in charge of preparing meals. Soooooo much better choice than sugar or other white stuff. And I'm so glad for you for not feeling the tug of all those gooey desserts at the future in-laws'.
You prove a point to many of us -- you don't have to eat the bad stuff just to be polite -- and I'll bet no one was offended or thought you were being rude. Heck, most people won't even notice!
Golden Corral does a nice buffet that really has a lot of LDL friendly foods!
My hubby and I are headed to San Francisco this week to see his Mom -- and I am not a bit worried about sticking to LDL while we are there. Fortunately, I get to do a lot of the cooking when we visit, but the eating out is going to be really easy. No worries! I think the wait staff at most places is used to accommodating special needs and requests. I've yet to see a raised eyebrow!
Take care!
Terri

Re: Wendysgoodnews 1st day to Weight Loss
Oh boy my son decided to bbq the rest of the chicken and steak. I love the fruit that I got from Costco this week. I got Kiwi and it was pretty good. I had never tasted it before and was surprised it was so close to strawberries. I don't generally eat any snacks but today everyone is eating such junk food I decided to eat an apple so I wouldn't be tempted.
I brought an extra book for everyone here to look through. The ones I got somewhat interested in looking through the book all said it looked like to much work and they don't cook much. I remember saying that same thing and now I love to cook the recipes so I will just have to pray the Lord will change the way they are thinking. My older son is very overweight and on his dads side diabetes is strong. I am praying for better health for him and his fiance.

Re: Wendysgoodnews 1st day to Weight Loss
Got home tonight and I am too tired to fix anything so will munch of fresh fruit. Let me know if anyone else has notice this. Before doing LDL I had terrible finger nails that broke and were pretty soft. Now they are so strong and grow so fast I have lovely looking nails all the time.

Re: Wendysgoodnews 1st day to Weight Loss
I have been trying to do a new lunch recipe every week so I don't get in a rut always eating the same things. This week after being gone almost a week I didn't feel like making soup so decided to cook chicken. I know I read awhile back about using foil to wrap foods but that is what the recipe called for and all I had. It also called for grated cheese sprinkled on top so that can be optional for those that stay away from cheese.
There was so much delicious sauce that I sliced the chicken in strips and spooned the sauce over it on a plate. It should freeze really well since it makes 4 pieces for a later lunch.
Oregano garlic chicken
4 skinless, boneless chicken breasts
1 can of olives, sliced
1 can of tomato sauce
Minced garlic to taste
Oregano to taste
1/2 onion
1 can mushrooms
Place each piece of chicken breast in foil and make an open pouch. Dice onions over each piece of chicken & add 1/4 can of mushrooms over each piece of chicken.. Place heaping tablespoon of sliced olives and add minced garlic to your taste(I like lots of garlic so added alot). Pour tomato sauce over chicken(about 1/4 c. per piece) and sprinkle Oregano on top of sauce. Sprinkle grated cheese and close foil pouch so it does not leak during cooking. 350 for 1 hr

Cauliflower Potato Salad
1 whole fresh cauliflower- cut into pieces - even stems
1/2 chopped med or large onion
4 boiled eggs
hotdog relish - to taste ( I use almost half the jar)
1 Tbs garlic
1/2 c. small diced celery
Light Miracle Whip just to hold together
Boil cauliflower in lightly salted water until tender but not mushy
Drain and cool completely
Add remaining ingred.
This is even better the second day and lasts along time in the fridge. I also add extra mustard to mine.

Re: Wendysgoodnews 1st day to Weight Loss
Thanks for the recipe. As soon as I feel better, I will make this. I have a sinus infection. My doc said it was the sudden change in weather for me. I'll be better--got some antibiotics and over-the counter. Ollie, sorry I missed the picture for Red Cross. I also missed the Lenten service at Grace. Went to the Dr. early. I also had all my blood work. My DR. thinks I am doing so well. He thinks we should begin a class. I am like you, I tell and suggest, but one has to want it. If you follow Roger's plan, cravings go away. It's hard to explain that to people. JF

Wendy,
What kind of olives do you use in your new chicken recipe? Green or black? I have made several of the foil packet chicken recipes and have liked all of them. Looking forward to trying out yours.

Re: Wendysgoodnews 1st day to Weight Loss
Thanks so much for posting the recipes and in such a consise form. I copy recipes from here, print them off and glue them to file cards. Yours fit very well!
I am going to try the chicken one this weekend.
I mentioned before I like to check your journal for how your day is going with weather etc as I am directly north of you in Alberta.
You are doing great.
