Re: Wendysgoodnews 1st day to Weight Loss
I love hot lentils cooked al dente in broth for breakfast. Even in summer, they are a warm, soothing way to wake up, and really kick-start my metabolism. Then you can drain and reserve the broth for other uses and use the lentils in cold salads where traditionally beans or potatoes might be used.
The Israeli Chickpea Soup is very good cold, too. SOO simple and filling.

Re: Wendysgoodnews 1st day to Weight Loss
Thank you Gwen
I will have to cook more lentils and see if I like them. I have only tasted them mixed in the 9 bean soup and then you don't get the true taste of any one item. I am grocery shopping today so will pick some up. I know they are supposed to be very healthy so thanks again.

Re: Wendysgoodnews 1st day to Weight Loss
Went shopping in Missoula today for fruit. We went to our favorite Chinese Rest. to eat and I ordered chicken chowmein again. This time I asked about the msg and they said they could make it without. When we got to talking she mentioned that chowmein has sugar in it also which I had no idea about. So they made me some with no sugar or msg and it was still delicious.

I have been amazed at how accommodating restaurants will be if you tell them what you need. Good job! Pam

Tonight is Bible study and they always eat afterwards which is so late. Tonight is roast beef, potatoes, carrots and jello salad made with sugar.

Re: Wendysgoodnews 1st day to Weight Loss
I made the marinated salad that has been going around on the boards but put in cauliflower, broccoli, black olives/sliced green olives, water chestnut(for crunch), green onions, garlic with red beans & garbanzo beans. They were the only beans I had on stock in cans and didn't want to shop. Then I put the Zesty Italian dressing on. I made enough to take Mike through the week I thought but it was so good we didn't leave much.

Thank you so much Gwen I will look for it in the store next time. I would much rather have sugar free then the Zesty that has sugar.

Re: Wendysgoodnews 1st day to Weight Loss
I have been seeing recipes on the board for Enchiladas so just had to make some today. I used 2 different recipes and put them together to make 1 recipe. It turned out very good and will last for days using only 2 chicken breasts. I don't like real hot and I don't care for the green chili peppers it called for so I used regular red peppers.
Chicken & Bean Enchiladas
2 Tbs Olive Oil
2 Skinless, Boneless Chicken Breasts cut into thin strips
1/2 C. Chicken Broth
1/2 Large Onion
1/2 C. Red Peppers - diced
2 Tbs Minced Garlic
1 10oz. can Mild Red Enchilada Sauce
1 1/2 C. Frozen Corn (make sure once thawed to drain all liquid)
2 Tbs Cumin
1 tsp. Chili Powder
1 can Red or Black Beans - drained and rinsed
1 C. Black Olive cut in half
1 1/2 C. Shredded Taco or Pizza type mixed Cheese
Put Olive Oil in skillet and add chicken strips, onion, garlic & red peppers. Cook 10 Min on med. stirring occationally. Add all spices, chicken broth, thawed corn & beans. Let cook on med. for another 10 Min covered.
Pour into glass dish 9 x 13 and pour enchilada sauce over evenly. Evenly add cheese and olives over top.
Put in preheated 375 oven for 25 min uncovered. Let set for 15 min. before eating.
*Options:
Add green Chili Peppers
Add Sour Cream before eating
Add 1/2 C. FF Cottage Cheese to chicken mixture before pouring into oven pan.

Re: Wendysgoodnews 1st day to Weight Loss
All I had was regular cheese I had re-bagged a long time ago from Costco so that is what I used. It was delicious without having any tortilla soft shell used, I used just the whole corn and beans as filler.

I'm drooling over your Chicken & Bean Enchilada recipe.
Would you please do me a favor and post the ingredients for the canned enchilada sauce?

Re: Wendysgoodnews 1st day to Weight Loss
Gwen I would love to but I only got the one can and it is gone. I plan on replacing it right away though so will list ingred. then. I read them but I can't remember what it said. I have lost 3 lbs this week though and I have eaten it everyday so it must not have had anything to bad in it. The corn I used was out of our garden from last year so it was delicious.
Here is a recipe to make your own sauce:
Ingredients:
1/2 cup chicken broth
3/4 cup finely chopped onion
2 cloves garlic minced
3 tablespoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1 can (28 ounce size) tomato puree
Directions:
Heat half the chicken broth in a medium saucepan over medium heat. Add onion and garlic and cook 5 minutes or until tender and liquid evaporates.
Add the remaining broth, chili powder and remaining ingredients. Stir together well.
Partially cover and simmer 30 minutes stirring occasionally.

Re: Wendysgoodnews 1st day to Weight Loss
Wendy, THANK YOU. Knowing you are careful, I wasn't concerned about bad ingredients, I just wanted to know how to capture that elusive flavor so I can make it at home. I went to my old Better Homes & Gardens cookbook to find a recipe for homemade enchiladas once. The recipe started with "one can of enchilada sauce".
Congratulations on another 3 pounds, lady!

Joyful
You will just love it and it was very easy to make. With the corn and beans in it I didn't even miss not having it wrapped in tortilla soft shells.
